Ingredients:
pizza dough:

-1 cup warm water
-
-2 1/2 cups organic all-purpose flour, plus extra for sprinkling

-1 1/2 tsp dried yeast
-
-1/2 tsp kosher salt
-
-2 tbsp extra virgin organic olive oil, plus extra for oiling
basic toppings:
-
-tomato sauce
-
-shredded organic cheese
-
-fresh organic basil
plus any of the following toppings:
-
-sliced green and black olives
-
-sliced fresh organic mushrooms
-
-organic pepperoni
-
-sliced organic tomatoes
-
-diced organic ham
-
-organic sweet peppers
-
-cooked chicken breast, diced
-
-chopped artichoke hearts
-
-small organic broccoli florets
Directions:

1.Make pizza dough: Stir together the flour, salt and dried yeast in a large bowl. Make a well in the center.

2.Pour the oil into the well, and mix by hand. Add the water, and keep mixing until you have a dough.

3.Sprinkle a clean surface with flour, and knead dough for 6 to 8 minutes, until the dough is smooth and elastic, and all the ingredients are evenly distributed.

4.Wrap the dough entirely with a clean kitchen towel, and set aside at room temperature until the dough has double in size (about 45 minutes).

5.Pre-heat oven to 425 degrees F.

6.Divide the dough into 6 equal balls. Roll each ball flat until they are 1/4” thick.

7.Place rolled mini-pizzas on a baking sheet.

8.Spread tomato sauce on each mini-pizza base. Add the shredded organic cheese plus your choice of toppings (have your child help decorate them!) Finish by garnishing with fresh basil.
